hey ellen! first off thank you for this wonderful resource! I am helping a friend cater her wedding and was wondering about some portion sizes..the menu:
veg tray
chz tray
bacon wrapped shrimp
chicken lolipops
ceasar salad
green salad
mango coleslaw
peach tomato feta salad
roast beef
chicken thighs and drums w bbq
green beans
corn confetti

It takes about 2 (non-attending) people in the kitchen and 6 out front to set up, serve, and clean up this size party. You want the appetizers ready when the guest starts to arrive.

veg tray- suggest classic relish tray top of the veggie tray page, with about 4 pounds of finger veggies and a quart of Ranch added
chz tray- 1 pound per 12, some can be logs or spread
6 pounds crackers
bacon wrapped shrimp- VERY popular. At least 2 per person
chicken lollipops- 1.5 per person

roast beef, 2 pounds raw per 5
chicken thighs and drums w bbq, 1 quarter per 2, cut some apart, as some people will want both

green salad
Caesar salad
With the other 2 salads, consider doing just one of these- use the plan for 100 page.
mango coleslaw-2 1/2 gallons
peach tomato feta salad- 2 gallons, none left

green beans-22 pounds ready to cook
corn confetti-22 pounds ready to cook
