550 divided by 4=138 whole 2 1/2 to 3 pound chickens. However, in my experience, if you cut some of the quarters apart, some folks take just 1 piece, so you would do less for buffet service than plated. Do you have a vegetarian alternative for the non-meat eaters? With 550 people there willl be some. |
