Thank you so much for such a great site!! I am catering my sons wedding the end of June. Could you please help me with the amount of food to purchase? Our menu is as follows;
Pulled pork
Chicken, off the bone
Instant mashed potatoes
Gravy
Corn or green bean casserole (haven't decided which one)
Baked beans
Salad
Italian pasta salad
Jello salad
Veggie tray
Relish tray
Slider rolls for pulled pork
Dinner rolls

My drinks will be;
Coffee
Ice tea
Orange punch
Beer
Seven/sevens
Screwdrivers

I also don't know if I should have a snack table later in the evening. What do you think?

125 people

Pulled pork- 25 pounds ready to serve
Chicken, off the bone- 1 pound per 4 (1 pound whole chicken makes 1/2 pound)
Slider rolls for pulled pork 240
Dinner rolls 1 per person 3 pounds butter

Instant mashed potatoes
Gravy
Consider doing baked rice pilaf instead, much easier to handle, see the recipe box on this site. 18 pounds dry.

Corn or green bean casserole (haven't decided which one), start with 30 pounds veg for either
Baked beans, 5-6 #10 cans

Salad- plan for 100 page, do 1 1/4 the amount for 100
Italian pasta salad-4 gallons, 8 pounds dry pasta
Jello salad-20 small packs

Veggie tray- consider fruit tray instead, pretty, more popular, see fruit tray page; the deluxe tropical tray for 100 would be about right
Relish tray- see the veggie tray page for classic relish tray, do 1 1/2
Maybe add a cheese tray, 8 pounds cheeses, 6 pounds crackers
