I am in charge of a banquet for 150 people. We will be serving chimichangas. I would appreciate help on the amounts of lettuce and toppings for the chimis. Typically a chimi is served on a small bed of lettuce with the following toppings: shredded cheese, diced tomatoes, green onions, sliced olives, sour cream, salsa, and quacamole.
