If you are serving/plating, not self serve, allow 9 pounds each dried rice and dried beans per 100. The tacos, depends on whether soft or crisp and what you are putting in them- you will have to write back. |

I am doing something similar only for 100 guests. Can you make the Spanish rice a day ahead will it hold, the same for the beans. |
