Ellen, I need to order meat for a wedding. I checked your information and wanted to be sure that I have the right calculations. The wedding meal is at 12 noon, self serve, buffet for 180 people. We are slow roasting top round, in a liquid/soup mixture, on low for several hours. Would 90# beef be enough? We also have boneless/skinless chicken tenders baked in a sauce, as the second meat. Would 45# of chicken be enough? Thank you for your help. |
