We're planning a retirement party and expect about 300 "floaters" (in, greet, snack, out). Here's what we're serving: Finger sandwiches - egg salad, pimiento cheese, marmalade & cream cheese Little meat balls Little cream puffs (premade) Veggie & Fruit trays Chips, crackers & dips Punch/Bottled water I read the "sandwiches for 300" plus the bulk sandwich filling recipes, (I'm doing the egg salad) but don't know how to gauge how much of each to make given all the stuff on the menu. Can you help with quantities of each? Thank you!!! |

Suggest you add a meaty sandwich, ham salad or chicken or tuna salad, maybe. Finger sandwiches - egg salad, pimiento cheese, marmalade & cream cheese- 4 pieces per person. 150 eggs for you Little meat balls- 10 pounds per 100, 3 quarts sauce per10 pounds Little cream puffs (premade)- 2 per person, if you also have cake. If not, add 2 cheesecake bites per person
Veggie trays- use the veggie tray page, do for no more than 200
Chips, 1 pound per 15
