You want to have 10 slider rolls per pound of meats, and you want 1 pound meat per 4 people.

You want about 1 pound per 5-6, so I suggest about 3 gallons of chicken salad (will take 12-14 pounds boneless chicken or double that bone-in)and double the beef and turkey. Also for the beef, consider doing either same weight meatballs- meatball sliders are very trendy- or Italian shredded beef, using chuck; both are a bit more dressy, and a lot less drippy, which matters with wedding clothes.

homemade desserts 2-bundt pan size pound cakes, 2 cheesecakes, 60 chocolate chip cookies (suggest you do at least 1 per guest), 40 peanut butter cookies, several other cakes or pies to be determined, also a fruit tray to serve 25. Might triple the fruit and move it to the nibble table.
