We are having a wedding reception for 115-125 guests. It will be in the afternoon can you check the amounts for me. The nibble table Veg. trays of 4lbs cauliflowerettes, 4lbs baby carrots, 4 lbs broccoli florets, 6 cucumbers, 3 dry pints sweet mini peppers, 4 pints cherry or grape tomatoes, gallon ranch dip, cheese trays 4lbs cheddar, 4 lbs jack, 4 lbs swiss, pkg. pretzels sticks for skewers, relish tray 1 gallon pickles each of dill & sweet, 3 lbs black & green olives. We will be doing sandwiches on small rolls or buns. Shaved ham 7lbs, turkey 5 lbs, BBQ sloppy joes 8lbs, chicken salad sandwiches fixing(yours), Cheese 7 lbs, 5 heads of lettuce, 8 lbs tomatoes, 10 sweet (noonday) onions, 3 quarts of mayo, 18 oz mustard 6 gallons potato salad, 4 bags chips. We will besides wedding cake be making homemade desserts 2-bund pan size pound cakes, 2 cheesecakes, 60 chocolate chip cookies, 40 peanut butter cookies, several other cakes or pies to be determined, also a fruit tray to serve 25. |

Shaved ham 7lbs, You want about 1 pound per 5-6, so I suggest about 3 gallons of chicken salad (will take 12-14 pounds boneless chicken or double that bone-in)and double the beef and turkey. Also for the beef, consider doing either same weight meatballs- meatball sliders are very trendy- or Italian shredded beef, using chuck; both are a bit more dressy, and a lot less drippy, which matters with wedding clothes.
