How do you make 'soy milk skin'? That's the thin, crepe-like membrane that dim sum are sometimes wrapped in -- a thin 'skin' of soy. |

This is also called yuba and is available dried or frozen in Chinese groceries. It is quite challenging to make at home - discussed in my soy milk article, as it is a side product- and only makes about 6 sheets per soy milk batch or recipe. |
