I am catering a wedding for 144 people. The 2 meats will be pulled pork bbq and fried chicken (we are in the South - can you tell?) How much of each should I plan since not everyone eats pork and not everyone eats fried chicken! I had planned on 40# of bbq and 100 pcs of chicken. There will be 4 sides plus salad. Also, rolls and coleslaw for the bbq. |

One more thing I wanted to add to the above request. There will be a cocktail hour with 4 items (veggie tray, cheese tray, mini ham biscuits and mini wraps. Not thinking I will need a lot of bbq and fried chicken? |

1 piece fried chicken per person (people take some of each, and those who don't take pork take 2-3) About 30 pounds ready to serve sauced pork, which starts with about 30 pounds raw boneless If this is a paying gig, please make a donation, maybe a dime per guest, to support the site. Thanks. |
