How much chicken will we need to make shredded chicken sandwiches for 230 people? We are also having BBQ pork sandwiches as well. |

1 pound whole chicken makes 1 cup meat, which in turn makes 3-4 sandwiches with sauce and fill-ins. You need about 300 sandwiches if it is adults and you are allowing seconds, so the amount of chicken depends on the amount of pork. |

Wedding reception for 225 Hi. I am ordering 25 lbs of each of the following meats, bbq pulled pork, bbq chicken breast, bbq chicken thighs and bbq beef brisket, total of 100 lbs of meat. Is this enought for 225 guests? there will also be veg sides and salads. |

Cindy, I would order at least 45 pounds brisket, plus all the others, and add 25 pounds sausage. Put the brisket last on the serving lines (you will need 3, or 2 double sided for this many people), and have someone serving it for the first round. With the current order you are cutting it too close, because when there is more than one entree, people take more and some of each. Because the chicken is bone-in, you only have enough for about 70 people. Pork, about 90. Brisket, about 50. Hope this helps. |
