Hi Ellen I'm cooking baked chicken Marsala for a 250 ppl, when I cook it at home I'm cooking for a few ppl, I checked your big pot section to see how much of each ingredients I need but it wasn't to helpful, these are the ingredients that I use:, Marsala wine/Cream of mushrooms/Chicken broth Mushrooms/Onions I've already purchased 250 boneless chicken breast |

Jackie, I can't do much without your recipe, but here goes: First, if it is buffet service, you need at least 320 pieces, (about 40 pounds skinless boneless) per 100 people; so that means more pieces if they are small (under 5 ounces). For 100 people, I make almost 5 gallons of sauce. If you take your recipe and figure the quantity it makes, you will know how much to multiply it. If this is a party, I would definitely add sliced mushrooms to your sauce.
