Hi I'm planning a graduation party bbq for my daughter. My menu: bbq pulled chicken sandwiches (45servings), a veggie bbq chicken option (30servings), coleslaw, pasta salad, veggie/hummus trays,baked beans, cookies, brownies, cakes. I need to prepare for 75 (65 adults/teens and 10 kids).
I'm toying with the idea of making my own bbq pulled chicken rather than buying it prepared at the local bbq place due to the high cost $10.99 per pound w/o buns. Not sure how many sandwiches a lb of pulled chicken would serve? Also given that I will have a variety of side dishes how many lbs should I have of each side? thanks in advance! Ivy |

IVY, when you have 65 adults/teens and 10 kids, buffet style, you need to prepare about 90 servings. Dessert first, cookies, brownies, cakes, check the dessert planning page for a dessert buffet guide.
bbq pulled chicken sandwiches (45 servings), you need about 65, which is 13-15 pounds ready to serve; 1 pound whole chicken or chicken quarters makes 1 cup of meat, about 8 ounces. 1 pound boneless makes 2 cups. Pulled chicken is about 1/4 sauce, so you need about 11 pounds of meat. It is not hard to make.
coleslaw, 2 1/2 gallons, easy to make at home, even with the pre-shredded cabbage

thank you so much! This is very helpful! One more quick ?. Do you think it would be okay for me to make the pulled chicken this weekend and freeze it? The party is on June 22 next weekend. I'm trying to pace myself in preparing everything for the party. Baked beans I'm going to make on Saturday. I will definitely donate! Ivy |

Definitely, just do plan to thaw chicken in the refrigerator, not on the counter. 24-48 hours depending on how big your packs are. I stick to 1 gallon freezer bags, frozen flat, for mine. |
