I need some help with catering to my dad's wedding in a month. I'm not sure this is going to be enough though, and I need some input. Keep in mind that these trays will be rather large.

Here's what I have:

10 asst fruit trays
10 asst veggie trays w/ dips
10 asst cheese/cracker trays
Kari Pasta Salad (not sure what this is)
Potato salad
10 trays of deviled eggs
500 pigs in a blanket
250 asst mini sandwiches
Asst chips
Chocolate covered strawberries

You need to tell me when the reception starts, how long it will be and whether alcohol will be served; the quantities of the salads, strawberries; amount of chips and what if any dips; the size or weight of the large trays, which could be anything from 14 to 20 inches. For example, a sliced cheese tray could be as little as 2 pounds, while a cubed cheese tray could run 4, and you need about 20 pounds. This looks very light for 200 people. Please write back.

5:30pm till 10pm is the reception time. There are two cakes involved (not sure of the size of each). 5 large bowls of each pasta and potato salads. 10 fruit trays (20 inches) consist of pineapple, grapes, cantaloupe, honey dew, and watermelon. 10 veggie trays (20 inches) will have celery, broccoli, carrots, grape tomatoes, radishes, cucumbers, cauliflower, snap peas; and the the dips will be ranch, blue cheese, roasted red pepper, and onion. 10 cheese/cracker trays (20 inches) will consist of cubed pepper jack, cheddar, colby jack, and possibly smoked gouda.
The chips will be probably assorted doritos, lays, tostitos, and cheddar puff balls. We'll be buying strawberries in bulk. And I am not involved with the alcohol details so I have no clue at this point.

I had more on the list but half of the ideas were vetoed, this is what I have to work with. I feel it is too light but there's not much I can do to convince said people otherwise.

I hear your concern. For 200 people, some items are very short. I have been doing this for nearly 40 years, if that gives you any leverage.

10 asst fruit trays
10 asst veggie trays w/ dips
10 asst cheese/cracker trays
10 trays of deviled eggs
all OK, none left, need 12 pounds crackers

Kari Pasta Salad (not sure what this is)-12 pound dry pasta to start, plus add-ins
Potato salad- 6 gallons

Try to get them to add 5 gallons of slaw and 4-5 gallons of an interesting veg salad- 4 bean salad, texas caviar, etc, corn/black bean salsa, spinach, etc

500 pigs in a blanket
250 asst mini sandwiches- at least 3 per person- this is a meal time and a long party, and this is simply not enough. Alternative would be to add 25 pounds meatballs in 6-7 quarts sauce

Asst chips- 1 pound per 12. 1 pint dip or salsa per pound

Chocolate covered strawberries- at least 2 per person, and have some plain for the non-chocolate eaters
