| Joe Becci 06/12/14 | Hi Ellen.. I'm making salmon for a party of 70. I'm planning on 1/3 lb pp. Do you have a recommendation as to how to prepare ahead? I'm OK with serving it just warm or room temp. Thanks! Joe |
| ellen 06/12/14 | Chilled, steamed salmon is a traditional summer dish, do not serve room temp. Steam perfectly day before and serve with mayo and capers among the garnishes. |

1)Is a 1/3 lb pp your recommendation? Thanks!!!!!! Joe |
| ellen 06/14/14 | Yes, grilled chilled would be possible, you have to watch not drying it out. 1/3 pound per person is fine. If this saves you time, trouble, or money, please make a donation, maybe a dime per guest, to support this site. Thanks. |
