Doing a sit down dinner for 75 on the 21st. I am serving beef tenderloins, potatoes, green beans, salad AND chicken pieces in a mushroom soup sauce. My question is.....would it be OK to cook 50-55 pieces of chicken in the electric roasters......I have two roasters, so 50-55 pieces in each one? How long and what temperature? |

Karen, if you are doing tenderloin, don't do more than one piece of chicken per person- you will have too much left over. Split the 75 pieces into the 2 roasters and you will have an easy cooking situation. Preheat roasters 20 minutes- they need to be on 2 different circuits so they don't blow fuses- cook at same temp as your regular oven recipes, but start checking doneness at 3/4 the time. When done turn to 180 to hold. |

I bought boneless thighs and the chicken legs. Would it be best to put the thighs in one roaster-the legs in the other. Which one would get done first do you think? |

Separate is good, the legs will cook faster. |
