I'm organising a fundraiser for 300 people, it starts at 7 and finishes at 11. It's a three course meal. I'm just not sure when to serve the meals and how long it takes to serve them. Can you please help me? |

Courtney, is it buffet service, family style (food on the individual tables to be passed), or plated with servers, and what is the menu? All these tings affect the service. If there is something like a silent auction, where people will be milling around, you would do appetizer tables first, then the dinner. If it is entirely sit down, that's a little different. Please write back with more info. By the way, a meal this size calls for about 5 people in the kitchen and around 20 out front to set up, serve, and clean up the event. You should look for an experienced kitchen/catering manager, even if volunteer, to oversee all. |

I have hired a menu and I'm not cooking or anything. I'm just asking how long it will take for all attendees to receive their meals once it's cooked and all that. We have a silent auction, but most of it is sit down. |

If you have hired an experienced caterer, they know how much staff they need for various service types. This many people, you would expect that each course would take about 20 minutes for full plated service for the entire group. For buffet, they would set up 4-6 service lines, depending on the menu. |
