Sometimes when I make scallped potatoes, they turn green. Any ideas why? My family loves them, but I hesitate to try again. I have been making scalloped potatoes for 34 years and this has only happened in the past 5 or so. Thanks. |

I suspect you have a new knife, grater or bowl that is metallic. Use a plastic bowl and a stainless knife or grater. Slice the potatoes into lemon water and they will stay white. Use a glass casserole. The other possiblility, if it is just a rim of green, is the poatatoes have been stored in sunlight and the green is the toxen they form under the skin. Good luck, Scalloped potatoes are too delicious to give up. |
