Ellen, First your website is great and full of wonderful information and ideas! My question is related to a wedding reception for 200 people. We are doing heavy hors d'oeuvres to include prime rib and deep fried turkey sliders. How many pounds prime rib and turkey will I need for slider sandwiches and should I plan on one of each sandwich for each quest? |

Wedding reception-200 Assume all this is cooked ahead? Boneless prime rib, 1 pound raw per 6 to at most 8 sandwiches, so at least 40 to 50. 1 pound whole turkey makes 1 cup turkey meat, which makes 8 sliders, so at least 25 pounds whole. Because of the popularity of beef, you want to plan for 1 turkey, but almost 2 beef per person.
