Hi Ellen, I am helping to cater a Brazilian Wedding. The 2 main dishes are a Tropical Chicken Breast and the second is a three meat mix of chicken, sausage, and beef.it will be set up as a buffet. Can you tell me how much of the three meat dish I would need to accompany a tropical chicken breast for each guest? Also white rice and black beans as a side for 130 guests? |

Allow between 1/3 and 1/2 cup of the meat mix, depending on the other dishes. For moderate side dishes of rice and beans, cook 8 pounds dry of each per 100. For larger servings,allow 12 of each per 100. |

Thanks so much Ellen! Since there are 2 main dishes, would you say 13 pounds (uncooked) of each of the three meats would be enough to feed 130? |

Yes, generously, might even have some left. 1 pound boneless raw meat makes about 2 cups cooked. |

Thanks Again! Your so helpful! I am planning 16 pounds of cooked white rice and black beans as a side dish. Do you think that will cover 130 people? I promise this is my last question :-) |

Should be OK. Assume you have salad, etc? Not necessary to be the last question- you might have another party someday. If the Brazilian dish is a hit, you could share the recipe. |

Yes fruit trays, cheese/crackers, salad, Brazilian cheese bread before the meal. Do you think I should do more then 16 pounds of rice and beans? |

For 120, about 12 pounds dry of each- so 16 each is a lot, 16 total is shy. |

Thanks! If I use the 12 pounds of dry rice you recommended above, how many pounds of cooked rice will I have when prepared? |

It depends on the type of rice, long, medium or short grain, brown, parboiled, etc. Usually, 1 cup dry makes around 2 cups cooked, but it can be up to 3- 1 pound dry rice is about 2 1/4 cups raw, so you will have about 27 cups. which will make around 55 cups cooked, about 1/2 cup per person.
