Menu of mustcholi. Chicken and dumpling. Corn. Rolls. Salad. How much to I need of corn and salad? If I'm using the big white Nesco cooker how many do I need for mustcholi and how many do I need for chicken and dumpling and how many for corn |

Corn, 1 piece per person plus a few. Salad, see the plan for 100 page and do 1 1/2 times the amount for 100. A roaster generally holds between 50-60 servings. Two for the corn. The others I don't know hpw much you are planning of each? Unlike crock pots, each roaster uses a whole circuit, most rooms only have one circuit, most kitchens only 2, so be SURE in advance you can run a lot of roasters. |

help! Hi Ellen I am cooking for my niece's wedding first time ever, and making spanish rice, pasta with meat sauce..pork roast..italian sausage.chicken strips with country sweet sauce...salad...rolls...on the main entrees having a problem making sure i know how many pounds of rice, pasta, hamburg meat for sauce...i know i am getting 80lbs of pork will me the most popular..this is based on 125 people..now i've been all over your site just want your opinion that i'm on the rt track...i'm thinking 20 lbs rice..20 lbs tossed salad..15 one pound bx ziti..20 jars of spag sauce..am i on the rt track with these amts? heavy heavy eaters...want to make sure have enough..please help and thank you so much...you are so good any opinion to help this day be a success i would appreciate! |

Karen, this is a lot of food for 125, maybe too much-
20 lbs rice- no more than 12 pounds, and with the pasta you will probably still have some left With all the other meats, I would not do more than 50 pounds pork. |

Karen, caution: a person can't do this by herself and be alive for the wedding- and it takes 3 cooks and 5-6 people out front who don't attend the wedding, to set up serve, and clean up this size party. You are likely to have left over meats, even with 125 very hungry guests,and a You do need a gallon of plain, meatless sauce or a few trays of meatless pasta, for any vegetarians, along with Parm cheese, bout 5 pounds would be way plenty, and the 10 pounds meat in the sauce. Also, are you adding potatoes to the rice and pasta? Not necessary, and one more thing for the oven that can't be made ahead. If you want to post the whole idea, I would be happy to help simplify to a more do-able menu. |
