For a wedding buffet serving 90 guests, how much of each salad when there are 5 salad varieties? (I think making 90 servings for each salad would be too much.) Thank you. |

It depends on what kind of salads, and what else is being served. For example, iceberg lettuce, you want about 9 pounds head plus add-ins for serving 100. but if doing 2 different green salads, you just do about 10 pounds total. Potato salad about 4 1/2 gallons per 100, but if serving pasta salad also, just 3 to 3 1/2. Slaw, 3 gallons per 100, but if doing several specialty salads like corn-black bean salsa, broccoli slaw, and Texas caviar, a scant 2 gallons each.
