Serving 100 for 50th Pastoral Anniversary

Your site has helped me so much. I've followed your guidelines to the best of my ability, and am looking forward to our event on August 2nd. Appetizers will be served from 3pm-4pm.

I am officially overwhelmed at this point. The original menu was adjusted, and I am unsure how to accordingly adjust the serving amounts. Here is the menu with notes on serving calculations. I would appreciate some input on this menu and quantities. Thank you.

Chicken salad sandwiches on petite croissants, - 100 sandwiches

Cheese and cracker tray -
3 lbs. each of sharp cheddar, Colby jack, and mozzarella;
6 lbs. crackers - butter and multigrain

Deviled eggs -
4 dozen eggs/96 halves

Fruit tray & dip -
8 lb. fruit (grapes, strawberries, apples, ?)
8 cups dip (Fruit Dip)

Veggie tray & dip -
8 lb. veggies (broccoli, cauliflower, baby carrots, celery, cucumber slices, radishes, cherub tomatoes, black olives)
8 cups dip (Onion Veggie Dip)

Dessert -
decorated cake ordered
mixed nuts - 5 lbs.

Beverages -
coffee, tea, raspberry lemonade, and water

This is scant fare for 100 if it is a buffet style service. You need to adjust quantities and add at least a starchy item, could be a potato or pasta salad, and a veg salad item, could be tossed, or a couple of vegetable salads.
Write back and tell me what kind of service and what you could add?

The event is scheduled from 1pm-4pm, with self-serve light food buffet from 3pm-4pm.

There will also be no dining tables, only folding-chair seating due to very limited space. In addition, we only have room for one 8' serving table for food service, along with one 3'-4' table for beverage service. We will have replacement trays ready as food disappears (exception: cake).

We can make adjustments to the amounts of food listed, but can't easily add any other food requiring refrigeration. There is only one refrigerator, and we are already using several ice chests for supplemental cold storage.

Originally we planned to offer tortilla pinwheels with salsa dip. Would that be suitable to add?

OK, so this is late reception and requires a little less food. You have some difficulty here with the serving situation; do you have teens who could circulate with trays for some items?

Chicken salad sandwiches on petite croissants, - 100 sandwiches, I would do at least 120-130; some people will "eat supper" and take 2; the tortilla wraps would be a fine option

Cheese and cracker tray - Good
3 lbs. each of sharp cheddar, Colby jack, and mozzarella; maybe add 1 more- could even be a cream cheese block with a jam or chutney spill over it
6 lbs. crackers - butter and multigrain

Deviled eggs -
4 dozen eggs/96 halves- OK, could do another dozen

Fruit tray & dip -
8 lb. fruit (grapes, strawberries, apples, ?)- 12?
8 cups dip (Fruit Dip)=OK

Veggie tray & dip -
8 lb. veggies (broccoli, cauliflower, baby carrots, celery, cucumber slices, radishes, cherub tomatoes, black olives)- none left- O would go 10-12
8 cups dip (Onion Veggie Dip)- at least 12

Dessert -
decorated cake ordered-OK
mixed nuts - 5 lbs.- OK

Beverages -
coffee, use reception level
tea, ? iced? about 8 gallons, some unsweetened
raspberry lemonade, 8 gallons
water, bottled? at least 100. Pitchers, slice some lemons, mint and cucumbers into the pitchers for looks and taste

We will adjust items as suggested, as well as adding pinwheels and another cheese as well.
