I am doing a fundraiser and expect about 100-150 people. I am having burgers, dogs and Salads and Ziti at the end of the ride, then Brisket, Pulled Pork, Chicken and Sausage and Peppers for the dinner. How much meat should I buy? |

Lisa, what ride? And do you realize that meat- intensive meals are not good for fund-raisers, because they are so expensive (especially 2 meat- intensive meals with expensive meats)? Write back and tell me more. |

Ellen, It is a motorcycle ride to raise money for the Fisher House. Riders arrive at 10am to donuts and coffee. It's a 140 mile round trip ride starting and ending in the same spot, with 3 stops along the way. They can eat at all 3 stops if they choose. On the return, we will have burgers, dogs, (meat sauce, and kraut) sausage and peppers, salad and ziti and beverages. When all of the bikes are back we plan to bring out the smoked brisket, pulled pork and chicken. |

I am totally pro Fisher House and will work on this for you. Would you consider meatball subs instead of burgers, or even skipping burgers entirely? MUCH easier to prep, less labor intensive and less expensive. And with all the other meats coming, would not be missed. Also, may I suggest you add some kind of protein at the start? Could be as simple as cheese sticks, or could go for ham or sausage biscuits or such. Much safer, in terms of sustained blood sugar, than donuts alone. Will the salad and ziti carry over to the brisket, etc, to make a further meal? It affects amounts. |
