Event for 200 people

Hi Ellen,
We are hosting an event for 200 people. We will be serving ham, chicken parmesan,macaroni & cheese, broiled tilapia fillets. Side dishes are salad, dinner rolls or buttered noodles or rice pilaf or mashed potatoes. How much ham do we need and how many pans(chafing full pan)each of the other dishes?

ham, 1 pound boneless per 4
chicken parmesan, 1 small piece per person (3 ounces cooked, about 4 raw)
broiled tilapia fillets, need a sauce, about 20 pounds, some left

macaroni & cheese, 16 pounds dry pasta, 1 quart sauce per pound, 1/2 to 1 pound cheese per pound
buttered noodles-skip
rice pilaf
mashed potatoes
This is too many starch choices and the menu is in desperate need of at least 1 vegetable. With the mac and cheese do either rice or potatoes, 12 pounds dry rice or 50 pounds potatoes, not both; rice is easier.

Some kind of veg, 40 pounds ready to cook

salad, use plan for 100 table, do double the amount for 100

dinner rolls- 2 small per person, 6 pounds butter

It takes 4-5 people in the kitchen and 12-15 out front to set up, serve, and clean up this size party.

Hi Ellen, Here is my menu. Can you tell me how much I need.
1 Tilapia Fillets (pp) (Alfredo Sauce & abt. 4 sauteed shrimp on top)
1/2 cornish hens (pp)

How many pans of the following 4 dishes
1. Cajun rice
2. Should I do Mash Potatoes or Potato Salad

3. Italian style green beans
4. Steamed Broccoli (cheese on the side)

Should I do rolls or cornbread

I was not going to do a salad, I was going to do a fruit tray (is that okay)

I usually do spinach dip & crackers on the tables for when they arrive, is there something else I can do that would be not costly.

Which things can I do the day before?

Hi, Snuggles,

This menu is having a little confusion about whether it is dressy or casual and also ethnic vs standard.

In addition, the fish vs chicken is VERY dependent of on the age of the guests and the region of the country. In many areas, the game hens will be much more popular. I need more info to estimate, including above and whether it is plated or buffet service.

How many pans of the following 4 dishes
1. Cajun rice- about 14 pounds dry rice
2. Should I do Mash Potatoes or Potato Salad- neither

3. Italian style green beans- about 30 pounds
4. Steamed Broccoli (cheese on the side)- about 25 pounds ready to cook, 1 quart sauce per 20

Should I do rolls or cornbread- depends on the oven situation. With the fish and hens, you probably will run out of space for corn bread.

Fruit is fine with the 2 veg. See the fruit tray page.

Hummus is the current dip of the week- an option for your mid table.
