Love,love your site! After days of reading and rereading here is my menu:
Approx 130 guest at 5:30 pm
Pulled pork (butt) 50-60 lbs
Chicken (legs and wings) 25-30 lbs
2 roasters of Dolly Parton beans 6 gal
1 roaster of meatballs 12 lbs
1 roaster of green beans 3 gal
1 roaster of yams 3 gal
Potato salad 5 gal
Pasta salad 10 lbs dry pasta
Coleslaw 4 gal
Crockpot with cheese dip and tortilla chips..how many chips?
Pin wheels 2/ person
Veggie tray...will use guide for tray
Fruit salad ( thinking of a recipe on Pinterest that uses fruit cocktail mixed with fresh or frozen fruit and vanilla pudding) not sure how much...?
2 rolls /person
Cup cakes instead of wedding cake 200
Banana pudding purchasing from local restaurant 120 servings.

The hardest part for me if figuring out how much will fit in a roaster oven....I know u have said only to fill 2/3 full...but how much is that? Thanks for having this site!

Wedding reception, 130 people
A roaster will hold 3 gallons of beans, etc, or about 20 pounds of meat; 50-60 servings. 2 roasters will blow most household circuits. So, be aware that wiring is a real problem with most roaster intensive dinners.
Pulled pork (butt) 50-60 lbs 45 plenty
Chicken (legs and wings) 25-30 lbs OK; legs only is more economical and they hold better, especially in sauce
2 roasters of Dolly Parton beans 6 gal- OK
1 roaster of meatballs 12 lbs- fine; cut back the pork and chicken a couple pounds each
1 roaster of green beans 3 gal- this is what I usually do for 100- you want to do at least 4
1 roaster of yams 3 gal- OK, all gone
Potato salad 5 gal- OK
Pasta salad 10 lbs dry pasta- 8 enough
Coleslaw 4 gal- OK maybe some left
Crockpot with cheese dip and tortilla chips..how many chips1 pound per 12
cheese 3-4 #10 cans, about 3 gallons
