I have been asked to supply veggies for a 400 people wedding reception ( mid night meal ). We are serving pulled pork on a bun. Not sure how many carrots, celery, tomatoes and onions to buy. Should we do pickles too. ? Ranch dressing. Thanks Jacqui |

For the sandwiches, 8 pounds onions per 100, 1 gallon pickles per 100, 2 gallons cole slaw per 100, 8-10 pounds tomatoes per 100. Carrots, celery, dressing allow 4-6 pieces per person, see the veggie tray page; could do some other added veggies, just keep total pieces the same.
