Buffet for 200

Hi Ellen,
I discovered your site only yesterday. From someone who should have paid much more attention when my mother was organizing public suppers, I'm thrilled to find so much helpful information!

Our organization has been asked to host an event for 200. It is buffet style, w/ ages primarily 50+. We will be dishing out at the line. The menu is:
Turkey w/ Gravy
Tossed Green Salad
Peas
Carrots
Mashed Potatoes
Stuffing
Jellied Cranberry
Rolls
Pound Cake w/ Strawberries & Whipped Cream
Punch, Coffee or Tea

We have done most of this before, but have a few changes. Since we are serving both carrots and peas, I'm not sure how to calculate this purchase. Some may eat both, but others will choose only one. What would you recommend?

My second question has to do w/ strawberries. We are beyond fresh picking season in this region, so frozen is our alternative. How much should we purchase?

peas or carrots? Allow about 18 pounds peas, plus 14 carrots per 100.

1 quart frozen berries per 8 people for shortcake.
