I'm fixing 60 pounds of mashed potatoes for a church dinner. I'll be using russet potatoes. Should I boil them on the stove and keep warm in the roasters or cook them in the roasters (my proffered choice). How long should I allow for cooking if using the roaster? |

Assuming you mean the boiling before the mashing. Either works, it takes about an hour to bring a roaster full of water to the boil before adding the potatoes, no more than 18-20 pounds per roaster at a time. Once boiling, same as stove top. |
