Cooking for 55 people and was thinking of the orange dijon chicken, but don't want to fry that much chicken in my little kitchen. Will it change the taste if it is baked without browning it? |

Yes. It is actually sauteed, and can be done ahead and .frozen or refrigerated |

Made this chicken the other night as a test for our upcoming wedding. We made this in the oven, turned out great, can this be made in a roaster oven, if so recommendations or tips on how many per roaster, layered, not layered? |

If I were aiming for roaster ovens, I would do all the stuff ahead, thaw everything well IN THE REFRIGERATOR, preheat the roasters, and just reheat in the roasters- 16-20 pounds meat, max, per roaster. |
