Cooking a meal for approx. 300 people for a church fundraiser. Menu is boneless chicken breast, roast beef, mashed potato, corn, mixed beans and carrots, spinach salad. We will be sure to have 1 breast per person (they are large breasts, cut in 1/2 so they are still whole looking, but thinner). How much boneless beef roast, corn, mixed veg and spinach? Thank you!! |

If this is buffet service, you will have a lot of chicken left over, as beef is generally the preferred choice. Consider going with chicken only, or doing pork or sausages as the second meat. Otherwise, you will cut deeply into your profits. Write back. |

It is buffet and the people hosting chose beef and chicken. I am going with 1 small breast per person, and 105 lbs of beef. Is that enough beef? How much of each veg? |
