I need to cook down enough chicken to make chicken and dumplings for a fundraiser. We estimate 300 servings. Will 60 lbs of whole fryers and 90 lbs of leg quarters work? |

Yes. You can resimmer the picked carcasses to make part of the broth/gravy. Most chicken come in 40 pound cases; consider doing 40 whole and 120 leg quarters. |
