Making chilli for 100. Can I store chilli in aluminum 1/2 pans with lids and reheat. Please advise. |

Yes. However the critical food safety issue here is how fast it is cooled after making! You want NO MORE THAN 2 inches in the pans, and place in an ice bath or the freezer until cool enough to refrigerate. DON'T leave it at room temp to cool. You can pour it deeper in the pans once it is cold. |
