Hi I am 30 dozen bean/meat/cheese burritos, and 20 dozen eggs/sausag/potato breakfast burritos. I have no idea how to estimate how many pounds of meat, eggs or beans to buy.

Buffie, it depends on your recipe, the size of the tortillas (8 inch? 12 inch?) and how full you pack them. More info please.

Okay I will check on your site, as for us we are doing 8 inch tortillas and we were going to make them standard size. Not huge but not too small either.

Here is the recipe for 100 8" sausage egg and cheese burritos, compliments of the US Navy:

7 quarts eggs (that is, 140 large eggs)
3 pounds cheese, shredded
3 pounds cooked weight pork sausage
5 cups disced toamtoes (1/2 a #10 can, drained)
3 cups diced onions
1 tablespoon pepper
2 tablespoons oregano
100 8" flour tortillas (9 1/2 pounds)

Mix eggs,
Mix cheese,sausage, tomatoes, pepper, oregano
Cook 1 quart eggs, just partially set, stir in 6 ounces cheese mix, cook until set. You will do this about 7 times.
Just warm the tortillas, so they will fold without breaking- best done 2 at a time on a griddle.
Use 1/2 cup filling per tortilla.

MUST be held at 140 degrees or higher for food safety.
