Hi,
We are planning a party for my parents 60th anniversary. We have 28 people and planning on a standing rib roast. It is the sides that have us stumped. It is for December 20th we do not want it to be to much like Thanksgiving or Christmas Dinner.

Any good suggestions on unique sides that will be in season as to save money?

How many pounds for each of the following FOR 28 people?

Red mashed potatoes
Squash
asparagus

Yorkshire pudding, basically a giant pan of a popover, is the usual budget addition. Popovers or really good yeast rolls or croissants and butter would be another possibility.
You can also do a nice nibble table with fresh and dried fruits, cheeses, artisan breads or crackers, and maybe some fancy sausage to take the edge off appetites.

Red mashed potatoes-10 pounds
Squash- about 7 pounds
asparagus- about 9 pounds as purchased, which is about 6 pounds trimmed
Adding a 3rd veg such as broiled tomatoes, maple Dijon Brussels sprouts, etc, is another attractive economy measure.
