Wedding reception

I am doing the food for a wedding reception with 140 guests. It is an afternoon wedding so we are having appetizers ~ meatballs, wieners, mini sandwiches, cheese balls, cheese trays, veggie trays, chips & salsa, etc. How many crackers, chips, items do I need??

Assuming you plan about 2 hours of party time, you want to end up with about 12-16 ounces of foods per person:

meatballs, wieners,
about 10 pound each, 3 quarts sauce per 10 pounds
mini sandwiches, 1 sandwich (3-4 pieces) per person- see the tea sandwich articles on this site
cheese balls, cheese trays,
about 13-14 pounds of cheeses and spreads. 9-10 pounds assorted crackers, nice if some are gluten free
veggie trays, do 1 1/2 classic relish trays from the veggie tray page classic
chips & salsa,
1 pound chips per 12-15 (more for a younger crowd, less for an older), 1 pint dip or salsa per pound
I would add a fruit tray, see the fruit tray page, and at least 2 bites/pieces per person of an interesting item such as min-quiche, crostini, etc.,
