I'm planning to offer chicken or beef to about 70 guests. I'm not asking the guests to choose ahead of time, just asking at the dinner. How much raw meat do I need to buy of both? |

You will have some leftovers. Pro caterers offering sliced/roast beef and chicken figure 1 pound boneless beef per 3 PLUS 1 pound raw boneless chicken per 4, because people take more, and often some of each, when there are several options. |

Thanks Ellen, we're having our servers ask each guest what they prefer and then plating the food for each guest. My hope is that I won't have to make a serving of beef and chicken for each guest. There is a risk, but I'm going to estimate 2/3 of each meat and hope that when we get to the last plate, we won't run out of one or the other. Then if the guests want seconds, they can choose from what is left in the kitchen. |

If you are plating, it will likely be 6 beef for every 2-3 chicken. |
