All Swiss roll cake layers have eggs, flour and sugar, not much fat, and so are fairly healthy as cakes/desserts go. If you use an all fruit filling, or a fat free sugar free pudding as the filling base, it is a pretty harmless dessert. I can't recommend any changes in the recipes for the cake layer; sponge cake is a little finicky. I suggest yoo use the cake recipes I have already posted and create your own filling. |

The cake is hard to improve, maybe try subbing an egg white or two for some of the yplks, maybe try Splenda in place of part of the sugar. Improve the fillings- a lightly sweetened pastry custard; real fruit puree, cooked down, without lots of extra sugar; sliced stawberries with just enough whipped cream to help it stay rolled... |
