We are wanting to prepare pork tenderloin, both regular and stuffed, for 80 people. I am in need of your expertise. Is it possible to prepare this ahead of time and reheat in a Nesco roaster? If so, how do I prepare it so it won't dry out? I looked through previous posts, but did not see anything. Would preparing stuffing as a side dish be better? How many pounds of uncooked pork will I need? Thank you for your help! |

Pork reheats very badly, and the tenderloin roast, because of its leanness, worst of all. You need about 40 pounds raw, boneless meat. I have enjoyed fruit stuffed tenderloin (marinated dried apricots and figs). I would make a bread stuffing separate. |
