Making dinner for 300 guest. Two entree served with rice and salad. How much chicken Lbs for cream of chicken leg quarters? And how much steak flap or skirt meat for steak fajita. Guest with have the option of either or. Thanks! I was thinking 80lbs of chicken 75 lbs. Of steak |

Lisseth, I can't tell if the leg quarters are boned out or served on the bone; if it is on the bone, you need about 80 pounds of chicken but at least 80 pounds of beef. |
