I have a recipe for lemon bread made with a cake mix and instant pudding. It says it makes 4 small loaves or 2 medium loaves. How do I know what size pans these are? I'm just learnig to cook. Thanks.

Hi, Julie,

The "small" loaf pan is actually the mini loaf, it's about 2 1/2 by 5 inches, some manufacturers make a pan that has 4 all banded to gether into one pan, very convenient for gifts, freezing, or batchelors.

Regular loaf pans are 9by5 or 8 1/2by4, both work, the larger will give a flatter more rectangular slice, the smaller a higher, square slice.

Use bright or shiny pans for bread, dark pans for meatloaf and fruitcakes.

You could even make one regular size and two mini loaves with this recipe. Add the grated outside skin from a fresh lemon (the "zest")and a quarter teaspoon of mace or nutmeg to get an extra delicious result, and good luck with your efforts! Ellen
