At least 1/4 and up to 1/3 cup per person; 1 gallon serves 50-60 people. How about 3 1/2 gallons? Use really good broth or stock, not water, for the liquid. Restaurant supple stores carry stock base, several levels of quality. Get the most expensive, it makes a big difference. Use 1 1/2 tablespoons of flour and 1 1/2 tablespoons of poultry fat or butter for each cup of liquid. If you are roasting ahead, some of the stock can be made with the giblets and carcasses. Don't use the livers, for some reason, they are quite bitter. |
