I am serving 325 people at a work function we are having an assortment of desserts as it is divided into 3 shifts. How many pies, cheesecakes and cakes should I have. A shift is 250 people then 35 and 35 for the final two shifts.

There is a page on planning dessert buffets for 100 on this site. I would do 2 1/2 times the amount for the 250, then about 2/5 the amount for each of the late shifts.
