What a happy day.

This looks like a lot of food for 25 people.

Latkes (potato pancakes) - from 10 lb potatoes
this will only make about 30 latkes- you know whether this is enough for the group, or whether a lot of people will want 2.
Applesauce - about 9 cups
Sour cream - about 3 pints
Sweet cream noodle kugel - 2 9x13 pans- this will cut about 20 pieces. Maybe 1 more pan?

Bagels - 2 1/2 doz- OK
Lox - 9 lb- I usually allow 1 pound per 5, esp with the other salads
Egg salad - 6 pints plenty
Whitefish salad - 6 pints plenty
Tomatoes, sliced - 5 lg. maybe 6
onions, sliced - 2 1/2 lg ok
Capers,
lemon wedges,
Cream cheese - 3 lb (plain plus 2 flavored)- plenty! some left
Health salad (aka Jewish cole slaw, sweet & sour marinated cabbage & veg) - from 5 lb cabbage- plenty
You might add this pretty salad:

Rye bread - 2 1-lb loaves
Butter - not much- 1 pound
Hummus - 6-8 cups
With veg dippers (about 7lb total)
Pickles 1-2 quarts

Fruit - 2 pineapples, 2 lb strawberries, this is only about 40 strawberries, most people take 3-4. Pineapple is OK. Fat green grapes would be very pretty with this.

OJ - 3 qt- OK
Coffee (premade in boxes from deli) - 5 at each reg & decaf- OK, probably finish the regular
Assorted Dr Browns sodas- at least 1 per person, 2 for the under 30's

Jelly donut holes (traditional Israeli Hanukkah food) - 4-5 doz. plenty of sufganiyot
Gelt (chocolate coins) scattered on tables= 2 to 3 coins each

Rugelach - ?
Black & white cookies (Sm) - ?
Iced Hanukkah sugar cookies - ?
2 of each per person, small, you would have some left

Thank you so much. Yes, a lot of options. Too many picky people in my family. (Aren't all families like that?). Anyways, because the Bar Mitzvah is the day before I won't be able to really do any prep that day. Making ahead & freezing - latkes (will double), applesauce, kugel. Buying from Costco on Thursday - hummus, lox, tomatoes, whitefish salad, pineapples, strawberries (will do 3 lb). Ordering from deli with delivery Sunday morning - bagels, egg salad, cream cheese, the three cookies. Can purchase everything else the weekend before. Will make the health salad Friday. Donuts - either delivery or will send a relative to pick up that morning from DD. What do you think I should cut? Having a girlfriend come over and help with plating, refilling & picking up trash, etc. I used to have a part-time business as a personal chef and know I can get all the other prep done that morning . And, I will be delighted to make a donation. Even if I make too much, the leftovers will be delish and still less than having it catered.

I think it will be fine as is, and you will have some tasty leftovers.

The donation button upper left is an easy way to support the site.
