Hi, I would like to know how much ingriedients I would need to serve a dish for 500 servings.
Onions
Beef
Oil
Vermicelli
Garlic
Ginger
Soya sauce

These amounts will make 500 mild 1 1/4 cup servings:

BEEF/PORK CUBES,RAW 160 pounds
PEPPER,BLACK,GROUND 1/2 cup
GINGER,GROUND 3/4 to 1 tsp
GARLIC, chopped, 1/4 cup
WATER, 6 gallons, 1 quart
SOY SAUCE 5 quarts
MOLASSES 2 1/2 cups
ONIONS,FRESH,SLICED 61 pounds
CELERY,FRESH,SLICED 45 pounds
CABBAGE,GREEN,FRESH,WEDGED 22 pounds
CORNSTARCH 5 pounds
WATER 10 quarts
BEAN SPROUTS,CANNED,DRAINED 15 pounds
NOODLES,CHOW MEIN,CANNED 18 pounds

Brown beef/pork in steam-jacketed kettle or stock pot.
Sprinkle beef/pork with pepper and ginger.
Add water, soy sauce, and molasses; bring to a boil; cover; simmer 1 hour or until tender. CCP: Internal temperature must reach 145 F. or higher for 15 seconds.
Add onions, celery and cabbage to pork mixture; mix well; cover; bring to a boil; reduce heat; simmer 10 minutes.
Combine cornstarch and water. Stir slowly into hot mixture, stirring constantly. Cook 3 to 5 minutes or until thickened.
Add bean sprouts; mix well; bring to a simmer. CCP: Hold for service at 140 F. or higher.
Serve with 1/3 cup chow mein noodles and steamed rice.
This would be made in 4-5 batches due to the volume of food.

You will need 50-60 pounds dry rice for plate size servings for 500.

Omg Ellen! I didn't even expect a response lol you're amazing! Would I be a pain if I said I was from New Zealand and don't quite understand your measurements? We use grams,kgs and Litres as such. Thank you so much for replying so fast?!
