breakfast burritoes

Our church is planning a brunch for 400 to include breakfast burritoes (scrambled eggs, shredded hash browns, sausage and shredded cheese) can you help me figure out the quantities?

There is a recipe in the OAMC section at the bottom of the Big Pots page, makes 8; just multiply. However, do make at least 30 without meat. Some people don't eat sausage/meat.

Each 100 8 inch will take about
7 quarts of eggs (1 cup is 5 large eggs, so about 140)
2 1/2 pounds shredded cheese
2 1/2 pounds
1 pound onions
2 pounds chopped tomatoes (OPTIONAL)
8 pounds shredded potatoes
salt, pepper, oregano to taste
Do this in 7-8 separate scrambles, cooking the eggs partially set before stirring in the pre-cooked, meat onions, potatoes, etc.
