I need to know how many pounds of chicken it willtake to make chicken salad puffs for 100 |

1 pound boneless skinless chicken makes 2 cups of meat, and most chicken salads are about 1/2 meat, so a pound makes almost a quart of salad. Don't know how big your puffs are, but it is unlikely they use more than 1/2 cup, so you are looking ay 7-8 per pound. Whether some people will take two depends on what else is served and whether it is a reception or a lunch.
