If you are doing chunked potatoes, not one per person, and you are not serving another starch, you want about 40 pounds per 100 for a full meal buffet service, or about 100 pounds. If you have a choice, ask for garnet yams, they are much more flavorful- and prettier meat- than standard sweet potatoes. |
