Hello Ellen, I'm catering for 150 people. They are not sure of what they want but I'm suggesting Hamburger Steak w/onions & gravy, mashed potatoes,
Green beans, rolls, peach cobbler or strawberry shortcake. Or Baked chicken w/ rice, Beef tips, green beans,rolls, shortcake. Please help with the quantities thanks & which meal is best

I would not do hamburger steaks- not festive and many people are not eating as much beef and some no obvious onions, these days.

What about doing a festive do-ahead chicken in sauce such as my dijon wedding chicken or chicken marsala, on the Big Pots page, quantities there? Holds better, too. If you add a beef choice you will have a considerable cost increase, since people tend to take more, and some of each, when there are 2 choices.

What you do need is a side dish that can function as an entree choice for any vegetarians- with 150 people there will be some. This can be as simple as a crockpot of unchicken patties in the same sauce, labeled of course.

Do a pilaf rice with almonds or fruits, 14 pounds rice to start, maybe some left.
green beans, 22 pounds per 100
rolls, 2 per person, get good ones, 4-5 pounds butter, put them on the tables.
shortcake- 1 quart fruit per 8 people
Consider adding a dressy, colorful extra such as broiled tomato halves or spiced hot peach halves. It is a party...
