I need to make 400 chicken salad sandwiches. How much chicken will I need? |

1 pound bone in chicken makes about 1 cup meat, 1 pound boneless skinless makes about 2 cups. Most chicken salads are half chicken, the rest celery, parsley, mayo and add-ins. It takes 1/4 to 1/3 cup to make the sandwich, depends on how fat it will be, so you are looking at 50-65 cups of chicken meat.
